Swimming bladder and pig stomache soup

Ingredients:

Swimming bladder 3 to 4 liang or 30 grams,
one pig stomache,
winter muchrooms 6 – 8 pieces,
Rhizoma dioscoreae 3 qian or 10 grams,
Semen euryales 3 qian or 10 grams,
salt in a small amount, white pepper adequate amount.
Method of cooking:

Clean the pig stomache with water, then inverse it. Repeat cleaning for times with cooking oil and rough granular salt. Eliminate the gastric secretions and viscous material in the stomache. If too much fat in the soup is not desired, excise the omental fat adhered to the pig stomache. Clean the exterior surface with water. Boil in water for 2 to 3 minutes. Discard the water.
Soak the winter mushrooms, dried shelled shrimps and dried scallop in water. Swimming bladder soaked in water, cleansed and cut into small pieces.
White pepper granules in small amount, grind it for use (amount according to requirements).
Put all the materials into a stewing pot, add adequate amount of boiling water, stew it for 3 to 4 hours. Add small amount of salt when eating. Pig stomache may otherwise be cut into small pieces and put in a dish; add some soya sauce and pepper powder when eating.

Swimming bladder contains highly viscous colloid protein and mucopolysacchoride substances; it strengthens the loin and ankles, supplements kidney deficiency and has high nutritious value. �Z
Pig stomache strengthens spleen and promotes appetite, especially suitable for patients with deficiency and coldness of stomache qi. �Z
White pepper is acrid and hot in character; it warms stomache, strengthens spleen, regulates the middle-jiao, relieves pain and promotes appetite.
